Tiramisu with chocolate, pear and speculoos

Ingredients:

250g mascarpone
3 egg yolks
75g sugar
150ml whipped cream
150ml strong espresso (cooled)
2 tbsp amaretto (optional)
1 ripe pear, peeled, cored and thinly sliced
100g speculoos cookies, coarsely crumbled
50g dark chocolate, grated or finely chopped
Cocoa powder for dusting
Chocolate shavings or pieces for decoration
