Stuffed Pepper Soup


1 lb ground beef or turkey
1 onion, diced
2 bell peppers, diced (any color you prefer)
2 cloves garlic, minced
1 can (14 oz) diced tomatoes
1 can (14 oz) tomato sauce
4 cups beef or vegetable broth
1 cup cooked rice
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Shredded cheese for topping (optional)
Fresh parsley for garnish (optional)

In a large pot or Dutch oven, brown the ground beef or turkey over medium heat. Drain any excess fat.
Add diced onions and bell peppers to the pot, and sauté until they start to soften.
Stir in minced garlic and cook for about 1 minute until fragrant.
Add diced tomatoes, tomato sauce, and broth to the pot. Bring the mixture to a simmer.
Season the soup with dried oregano, dried basil, salt, and pepper. Adjust the seasonings to your taste.
Let the soup simmer for about 15-20 minutes to allow the flavors to meld together.
Stir in the cooked rice and let the soup simmer for an additional 5-10 minutes until heated through.
If desired, top each serving with shredded cheese and garnish with fresh parsley.
