Keto and Low Carb Crispy Milk Croquettes


80 g (⅓ cup) butter;
100 g (¾ cup) almond flour
500 ml (2 cups) of unsweetened almond milk
Salt and pepper to taste;
½ teaspoon of nutmeg;
50 g (½ cup) of shredded cheddar cheese;
100 g (⅔ cup) cooked chicken, cut into small cubes;
Eggs, almond flour and pork rinds

Melt the butter in a saucepan over medium heat and whisk in the almond flour until well combined. Gradually pour in the almond milk, whisking constantly, to make a smooth sauce. Season with salt, pepper and nutmeg.

Cook for 3 to 5 minutes, stirring frequently, until thickened.
