Cheese Crusted Chicken

Ingredients for 4 servings
4 pieces of chicken breast fillets
2 pcs eggs, size M
1 dash of water, cold
5 tbsp breadcrumbs, homemade if possible
5 tbsp Parmesan, freshly grated
3 tbsp clarified butter
1 pinch of salt
1 pinch of paprika powder, sweet
1 pinch of black pepper, freshly ground
1 piece organic lemon
Recipe preparation
First remove the fat and tendons from the chicken breast fillets and wash them under cold water. Then pat dry thoroughly and cut in half horizontally.
Rub the 8 thin chicken cutlets with salt, pepper and paprika powder and set aside.
Then break the eggs into a soup bowl and whisk them with a splash of water. Mix the freshly grated Parmesan and the breadcrumbs in another plate.
