8 thin slices of beef (for the roulades)
1 carrot
5 onions
1 celery stick
4 tablespoons mustard
2 tablespoons clarified butter (ghee) or olive oil
1/2 liter beef broth (or vegetable broth for a version without wine)
Salt and pepper to taste
4 pickled cucumbers (optional)
