1 cup vegan smoked ham, diced (you can use store-bought vegan ham or make your own using seitan or tempeh)
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
3 cups potatoes, peeled and diced
1 carrot, diced
1 celery stalk, diced
1 red bell pepper, diced
1 teaspoon smoked paprika
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
4 cups vegetable broth
1 cup corn kernels (fresh or frozen)
1 cup unsweetened almond milk or any other plant-based milk
Salt and pepper to taste
